Slim (above your post) hit it.  They would also want you to wire money to  someone (who happens to be he scammer).  You lose that money as well as have a bounced check charge.

The deaf part is so you won't call them - and possibly recognize a foreign accent.

Got a text from this number. We run a pet sitting service and the message kinda sorta related to that but it was worded very oddly. We didn't respond to it.

I have a dogwalking service. I also got a text from this number asking if I'll walk his daughter's dog when she moves to Atlanta 20th of September. His name is Allen Fister, stated he's deaf, wants to mail payment up front with cashiers check.

Probable overpayment scam.
Check is written for too much.  "Client" wants you to refund the excess ...
Then, after some time, their check bounces.
